OK just an update if someone else is experiencing the sudden mount off times.
I changed the Rpi to static IP, from the systemd-networked

Commented the DHCP to #DHCP. Also set my router to reserve the ip for the address I choose.

Just to understand - what makes my setup so "special" ?
Yes, the core image is old, but I have updated it according to instructions (and also the kernel).
The Rpi is behind a router.
I fixed the typos showed in the globals file, and now you can't see them in the debug log.
The only mod is the create_ap script, which creates the NaTed access point, and there seem to be nothing invasive with it.
